    #BestNic, who here always keeps a stock of pasta in the kitchen every month? Spaghetti, macaroni, fettuccine, you name it. It seems like nowadays Asians have started to eat pasta more often as a substitute for rice, don't you think?

    But I understand, #BestNic, that not everyone can enjoy this typical Italian dish freely because of its gluten content. Like people with intolerance, like me, for example. Now that I've moved on from gluten, I can make gluten-free food that can also be enjoyed by vegans and people with dairy intolerance.

    GLUTEN-FREE SPAGHETTI AGLIO OLIO

     

     

    Creamy and savory gluten-free pasta dish, without preservatives, without MSG, and definitely healthier, #BestNic. What makes it even more special, in this recipe I use garlic as the star. I love garlic so much that I even made 3 types of garlic for this recipe: fried, sautéed, and confit. Can you imagine how savory it is!

    Well, besides adding savory taste to the pasta, garlic actually has many health benefits, you know. 

    Improves Heart Health

    Garlic is known to help lower blood pressure and cholesterol levels, both of which are important for maintaining heart health. The compound allicin in garlic plays a role in reducing blood pressure and preventing atherosclerosis (narrowing of the blood vessels).

    Boosts the Immune System

    Garlic has strong antimicrobial, antiviral, and antioxidant properties, which help boost the immune system. Regular consumption of garlic can help fight infections and speed up the healing process of illnesses.

    Has Antioxidant Properties

    Garlic is rich in antioxidants that help protect the body’s cells from damage caused by free radicals. These antioxidants can also reduce the risk of chronic diseases such as cancer and other degenerative diseases.

    Reduces the Risk of Cancer

    Some studies suggest that consuming garlic can lower the risk of certain types of cancer, including stomach and colorectal cancer. The sulfur compounds in garlic have anti-cancer effects that can help inhibit the growth of cancer cells.

    These various benefits from garlic successfully made me fall in love with it that I use it in many recipes i have. And I bet you'll love it too!

    Ingredients

    115 gr gluten-free spaghetti

     water for boiling pasta

    3 tablespoons olive butter

    Black pepper

    Himalayan salt

    Ground oregano

    5 cloves of garlic for sautéing, thinly sliced

    5 cloves of garlic, for confit

    Glass jar containing olive oil

    1 tablespoon fried garlic for garnish

     

     

    Instructions

    1. Confit the whole garlic cloves in a glass jar containing olive oil using a food warmer at 80 degrees Celsius for 1 hour or cook with low heat while stirring occasionally until the garlic is tender. (You'll know it's done when the garlic can easily be pierced with a fork.) Then, crush using a sieve.

    2. Heat water, add salt, then boil spaghetti until al dente. Drain. Add olive oil. Stir well.

    3. Heat a stainless steel pan and melt the olive butter.

    4. Sauté thinly sliced garlic and crushed confit garlic.

    5. Add Himalayan salt.

    6. Add the spaghetti, stir gently as gluten-free pasta tends to be fragile.

    7. Add the pasta cooking water to the pan.

    8. Add ground oregano.

    9. Remove from heat and transfer to a plate, then sprinkle with fried garlic and black pepper.

     

     

    Tips

    1. You can use various types of gluten-free pasta such as mocaf, quinoa, or shirataki.
    2. Each gluten-free pasta has a different cooking time, follow the instructions on the packaging. It can be reduced by 1 minute because we will cook the pasta again to avoid overcooking.
    3. Olive butter can be replaced with olive oil for frying because olive oil has a smoke point value of 242 degrees Celsius, making it safe for cooking at high heat.
    4. Ground oregano can be replaced with parsley, rosemary, or Italian herbs according to taste.
    5. If there is no sensitivity to dairy products, this recipe can be made using butter or sprinkled with parmesan cheese.
    6. Simply sauté garlic over low heat. You can also sauté garlic and oil together from the beginning without heating the oil first.
